A little introduction is in order here before I go into this Nummy camping themed recipe. My name is Alli, and I come from a small town in midwest Minnesota. I am married to my wonderful husband Jeremy, have 3 rambunctious boys, Jaiden (7), Keagen (5), Avery (3) and 2 equally rambunctious dogs, Roxy and Diesel.
I received my passion for cooking and baking from my mother who has taught me well. It wasn't until this January after recommendations from people as to starting my own blog, For the Love of Food, to share my recipes and passion. I'm happy I did. I find great pleasure in cooking and baking for others that it has turned into and an obsession and I can finally consider myself a cookbookaholic.
Anywho, would you enjoy a recipe now? I know I would! I was given the challenge to create something related to camping and I was thrown through a loop as to what I wanted to make. Do I make a dessert, a salad, an entree? I finally decided I had to make something that would relate to s'mores. Who goes camping and doesn't make s'mores? Low and behold, S'mores Whoopie Pies.
I have always been a fan of Whoopie Pies. Who doesn't love 2 cookies with creamy frosting enjoining them together like glue? I always love double the pleasure! People who say less is more seriously don't know what they are talking about. MORE IS BETTER! And besides, I strive to please.
So, I have to admit, these almost didn't get made. Not that I was too lazy to make them, but I was too consumed in eating the batter of the graham cracker.cookies (yes the batter tastes like graham crackers) that I couldn't stop. Literally the batter was do good that I just wanted that and nothing more. I had to take a spoonful and bring it out tp my non-sweets loving husband to try, IT WAS THAT GOOD.
Anyways, it wad a horrific revelation and I decided I had to put my big girl panties on and reactivate my willpower and put the tasting spoon down and move on. I can't believe such a moist cookie this made and the milk chocolate AND marshmallow frostings holding them together, yum. This recipe will quickly become an established member of my family.

Recipe Source: Cookies and Cups
Ingredients:
1/2 c. butter, room temperature
1 c. light brown sugar, packed
1 1/4 c. flour
1 1/2 c. finely crushed graham crackers (I used cinnamon flavored)
1 1/2 tsp. baking powder
2 eggs
1/2 c. plus 2 tbs. milk
1 tsp. baking soda
1 tsp. vinegar
2 tsp. vanilla
1 can milk chocolate frosting
Marshmallow frosting (recipe to follow)
1 c. light brown sugar, packed

1 1/2 c. finely crushed graham crackers (I used cinnamon flavored)

1 tsp. vinegar
2 tsp. vanilla
1 can milk chocolate frosting
Marshmallow frosting (recipe to follow)
Marshmallow Frosting:
1/2 c. butter, room temp
1 c. Marshmallow Fluff
2 c. powdered sugar
2 tbs. milk
1 c. Marshmallow Fluff
2 c. powdered sugar
2 tbs. milk
Mix butter and Marshmallow Fluff on medium speed until smooth. Reduce
speed to slow, slowly add in powdered sugar and milk. Turn speed back
to medium until all is combined and smooth. Set aside or in
refrigerator.
COOKIES:
Preheat oven to 375°. Spray 2-3 baking sheets with cooking spray.
Combine graham cracker crumbs, flour, and baking powder in bowl, set
aside. In a small bowl stir milk, vanilla, baking soda and vinegar
together, set this aside also. With a mixer beat butter and brown sugar
together for 2 minutes at medium speed. Add eggs and continue to beat
until incorporated.Turn speed to low and slowly add in flour mixture and
milk mixture. Turn mixer up to medium and beat for an additional 1
minute. Drop by heaping tablespoon sized portions onto baking sheets.
Place the batter at least 2 inches apart. Bake 8-10 minutes, let cool on
baking sheet for 3 minutes and then transfer to wire rack to finish
cooling. Flip cookies all so the flat side is up, pipe or spread
chocolate frosting on half of the cookies and marshmallow frosting on
other half. Match cookies up by size and enjoy!
