A Tasty Tuesday Sample Spree!!!

Okay I have been trying so many new things these days with all my diet changes that I really needed to take the time to come here to share with you some of the little things that I love to nibble!  I don't know why that sounds so... dirty re-reading it.... whatever.  Moving on.  How about we start with this great new recipe I have created out of a combination of about five or six different recipes.  I took all the ideas basically into consideration and went for it on my own with what I had on hand.  Let me tell you something YUM!
My White Bean Red Pepper Salad
This recipe is very casual all really all to taste so don't feel obligated to stick to exactly what I have done here.
  1. Dice half a large onion, three cloves of garlic (or more if you are nuts like myself), 1 red pepper, and a handful of parsley, rinse 1 can of white kidney beans and set aside.  
  2. Heat a small skillet to a medium high heat and throw in your onions and garlic, cook till translucent and throw in your red pepper and white beans, heat just until warm.  You want to make sure that you still have a nice strong bite to your peppers but still bring out their sweetness just a little bit more.  Throw all this into a bowl.  
  3. put in about 3 TBSP of lemon juice, rice wine vinegar, salt, pepper, parsley and mix.  Taste and add a dash of whatever you think you need at this point, cover and put in the fridge to chill till dinner.  Ideally leave it overnight cause the more it sits the better it is.  Honestly AMAZING.

Make sure you make this at least two hours before your meal, great for a nice summer meal that you want to keep, light and fresh.  I also have to mention that this is the boys summer favorite right now and that includes daycare!  I highly suggest it, I have also done this adding chickpeas, cherry tomatoes, and quinoa and it was also really amazing!

Another great little late night snack that hubby and I have been addicted to since we got it at #vm2012 is our love crunch.  I can't seem to get a picture of these bags full EVER, all of us love it.  I am a HUGE fan of the carrot cake.  There is just something about those little yogurt bits I can't get enough of!  It also happens to be the first granola I have actually eaten the raisins in lol!!  I know you people know what I am talking about.

We are also huge fans of the company cause for every bag  you buy they donate that same amount in cash or product to the food banks of Canada and that is awesome!  So we are spreading some love to them here HUGE FAN!

I think that I like this last one cause it keeps me the coolest, makes all the kids happy and is super good for them and is yet another great way for me to get some calcium from non dairy products.  A few of you know that I have been playing with cutting dairy out of my diet and implementing calcium enriched foods from other sources.  I have heard a bunch of info about how our bodies have a hard time digesting cos milk and the calcium in it is really just depleted going threw our system and that the acidity in the milk can actually be harmful to our calcium intake.  This is why North America, with the highest intake of dairy on earth, also have the highest rate for osteoporosis; which is a massive concern of mine.  So soya is my friend right now and in desert form is epically awesome!!

I will definitely taking the time again to show you how awesome the kids thought these were!  I have been given an amazing opportunity to try these out and share them with the SMILE program in my local area.  I can't wait to get in there and share these with all the girls down there!  Here at daycare you can clearly see they are a HUGE hit and I even got to pass along some to my clients to have at home!

So what have we learned here?? That super healthy options can be super freaking good for you and freaking delicious too!
